Happy Wednesday! 
I hope everyone has picked up on the theme here; that every day I am posting a book review and a recipe.  Try them out and tell me what you think.  Today's book The Unwanteds by Lisa McMann is from the YA (young adult) genre, although I would really categorize it for the middle grades..4-7.  It is adventure, sci/fi, distopian world (that is so popular right now) but very readable. 

  For today's recipe I chose an old favorite of my mom's. Borscht is a beet soup, that is beautiful, hearty and very healthy.  I always make a big pot of it when I got on a diet in the winter!  Don't even worry about the dollop of sour cream because you are eating a big bowl of vegetables!  I don't have a photo, but here is the recipe:

Mom's Borscht

1 med onion                 ½ head cabbage           28 oz. can diced tomatoes
1 clove garlic                1 carrot                        6 beets peeled and sliced
1 green pepper             1 potato                       ½ c. white wine           
4-6 c. water or broth    s+p                              1 bay leaf
Dill                               sour cream (optional)

Dice all veggies.
Saute garlic in olive oil with onion.  Throw in green pepper, cabbage, carrot, potato, tomatoes, beets, wine.  Add water and spices.  Cook 1 hour.  Serve and sprinkle with dill and a dollop of sour cream.
