Italian Tuna
This is a recipe I made up, it's probably not even remotely Italian, but I had something like this once at a deli on the East Side and I think that is what they called it. I dice up whatever veggies I have on hand. Today I used about a 1/2 cup each of red pepper, celery, carrot and calamata olives. I mix it up with 2 cans of tuna, some oil and vinegar, s + p and some dill. You can add chick peas, diced cornichons, cheese, whatever you like! Great with some whole wheat pita bread.
