This is my favorite GUACAMOLE recipe from the New York Times Cookbook. Fairly easy and delicious.
Ingredients
2 lg. ripe avocados
1 medium onion, finely chopped
1 small tomato, finely chopped
1 garlic clove, minced
juice of 1 lime
s + p
1/2 cup fresh cilantro
also calls for 1 tsp chopped jalapeno (which I usually leave out)
Mash avocado and combine with the lime juice, onion, garlic, tomato, salt, pepper and cilantro. Blend well.
