This recipe was clipped from the ProJo a while back. The entire family loved it. Great summer salad!
Southwestern Coleslaw
14 oz. bag coleslaw mix
1 cup canned black beans (rinsed and drained)
1/4 cup fresh cilantro
1 medium tomato diced
1/2 medium red onion, diced
1 jalapeno pepper, diced
1 avocado, diced
1/2 cup fresh lime juice
2 Tablespoons rice vinegar
2 Tablespoons olive oil
1/2 teaspoon ground cumin.
Place coleslaw mix, beans, cilantro, tomato, onion, jalapeno and avocado in large salad bowl and mix. Whisk together remaining ingredients in separate bowl and toss.
