You Know When the Men
are Gone by Siobhan Fallon is a fantastic book of short stories. It may be obvious from the title that the stories are all told by military spouses. Each story tackles a different take on a similar theme, and many are very poignant.
My college roomate and I loved to cook. While other college kids were cooking up Ramen noodles, we were whipping up big dinners. I was lucky enough to end up with some great recipes from her mom. Thanks Mrs. M! This is one of my family's favorites. The kids call it "jump in the mouth" which I believe is the literal translation of Saltimboca.
Chicken Saltimboca
Dredge your chicken breasts in flour and sprinkle with salt and pepper. Saute lightly in oil. Place breasts on cookie sheet and top each one with a slice of prosciutto and fontina cheese (other types also work well such as swiss, provolone, etc..). Sprinkle with Parmesan and drizzle with a little white wine. Bake in 400 degree oven for 10 minutes. Yum.
