This book: We the Animals reminded me of the Glass Castle, in the way that the children in the book endure heart-wrenching abuse from their parents and still have tender moments. This is a slim volume, and the writing is beautiful. I look forward to more from author Justin Torres.
Last night I threw together what I had in my fridge, and the results were pretty yummy.
Ingredients:
1 large vidalia onion
1 Tablespoon brown sugar
1/2 red pepper, sliced
1/2 zucchini (I diced it VERY small, hoping the family would not notice the "green" and they didn't!)
2 chicken breasts, diced
3 cloves of garlic
1/2 cup vodka
1 cup jarred tomato sauce (any brand)
1/2 cup 1/2 and 1/2 (you could use cream, but this is what I had on hand)
1/2 cup Parmesan cheese (grated)
1. Saute onion in butter with salt, pepper and brown sugar.
2. Add red peppers and zucchini
3. In a separate pan saute diced chicken with sliced garlic
4. Combine contents of both pans, add vodka, tomato sauce and 1/2 and 1/2...then Parm
5. Pour over pasta.
