Pasta with White Bolognese Sauce
I read about this recipe in a novel about a women who loved to cook. I like the recipe much better than the novel, so that is what I chose to recommend to you tonight! I xeroxed the page and followed her directions. So, you are going to have to wing it for the quantities. I just did what she described here and it came out fantastic...so be brave and give it a try!
"Start with a soffrrito-onions, sauteed in olive oil with garlic, cooked until soft and golden-and the insaporire-parsley, carrots, celery. I sometimes add wild mushrooms, chopped fine. Then comes the ground meat. You may use beef, but it is much better with pork sausage, or a combination of the two. Add white wine and beef stock, simmer, tossing in salt and pepper to taste. When the sauce reduces, after 10 or fifteen minutes, pour in a stream of milk until the color is golden brown. You can also add a little nutmeg, or leave it out."
