Vampires and Witches and Daemons, oh my!

I really enjoyed A Discovery of Witches by Deborah Harkness.  Oh, how to describe this book?  Twilight for grown-ups?  Charlaine Harris meets Anne Rice?  It takes place in modern day and is filled with vampires, witches and daemons.  Of course there is love, betrayal, and some crazy witch on vampire, vampire on witch violence.  AND of course there is the suspense!




This is one of my stand-by dinners that I make all the time.  Of course it is better in the summer, with fresh vegetables, but it is good in the winter too with frozen corn.

Summer Garden Tortellini

8oz. tortellini
1 clove garlic, minced
2 oz. thinly sliced prosciutto (I often use Genoa salami or pancetta)
2 cups corn
1/2 stick butter
2 medium tomatoes, chopped
1/2 cup chopped fresh basil

1. Cook tortellini according to package (reserve 1/4 cup of cooking water)
2. While it is cooking saute garlic in butter, 2 minutes.  Add prosciutto, corn, salt and pepper.  Cook 5 minutes.
3. Add tomatoes and basil, cook 1 minute and remove from heat
4. Add corn mixture to pasta in large bowl and mix.  Add reserved water if too dry.

The last time I made this I drizzled lemon oil over it all and it was delicious.  Sprinkle with Parmesan and enjoy!
